Sharadha’s Indian Greens

1 Tb. Oil

1 tsp. cumin seets

1 dried red chili, or chopped green one

1 clove garlic, grated

1/8 tsp turmeric

1 bunch greens (beet greens, spinach, or chard)

½ cup fresh cilantro, finely chopped


2 potatoes, chopped into 1 inch pieces

Heat oil, and add the cumin seeds, wait till seeds sputter turn brown, and one dried red chili, or a chopped green one. Add 1 grated clove garlic, saute for 30 secs to a minute. add 1/8 t turmeric, and immediately add finely chopped bunch of washed beet greens, and 1/2 cup finely chopped fresh cilantro. Saute till greens are wilted. Add salt as desired. (dry beets well, so that the result is not soupy). Separately, cut two potatoes, roast with a little turmeric powder coated on them, either on stove top or in oven. Add potatoes to the greens and mix gently.
