Orange Vinaigrette
Ingredients:
1/4 cup frozen orange juice concentrate
2 tablespoons fresh lime juice
3 tablespoons white wine vinegar
1/2 shallot, finely chopped
1/4 cup olive oil
1 tablespoon finely chopped green onion
1 tablespoon chopped mint
salt and freshly ground black pepper to taste
Directions:
In a blender or food processor, combine the orange juice, lime juice, vinegar, shallots and process until smooth. Add olive oil and pulse a few times to form light emulsion. Transfer to a medium bowl. Whisk in the green onions and mint and season to taste with salt and black pepper.
