Kohlrabi Refrigerator Pickles

Easy Kohlrabi Refrigerator Pickles

Place 1/2 inch cubes of 4-5 kohlrabi bulbs in an airtight sealable container.  Drizzle with a small amount of olive oil; add a good splash of mild-flavored vinegar (preferable rice vinegar, but white vinegar with a small pinch of sugar will also work).  Add salt and pepper, cover and shake well.  Taste to adjust flavors.  Refrigerate 3-4 hours before serving.  These will last in the frig for up to a week.  Be sure to discard them after a week of refrigeration.
