8 - 10 eggs
1 cup (1/2 lb.) chopped greens (spinach or arugula)
1/2 c. grated cheese (Parmesan, cheddar, or feta)
1 Tbsp. finely chopped parsley or basil
1/2 c. finely chopped garlic, or garlic scapes
oil or lard for sautéing
salt and pepper to taste
Preheat oven to 350°. Sauté garlic with oil or lard in an oven-proof skillet until tender. Meanwhile, in a large bowl, whisk eggs until frothy. Mix in remaining ingredients. Pour egg mixture into hot skillet with garlic and cook over low heat for three minutes, or until the edges just begin to appear cooked. Place skillet in oven and bake uncovered for 10 minutes or until top is set. Cut into wedges and serve.
